Why cap categories at all?

Because a brief that ends is the product. Eight categories at once for one person is a feed again, and a feed is what you already have.

What happens when I swap one out?

The new one starts tomorrow morning. The old one goes quiet and can come back after thirty days — swapping is not a way to hold six.

Do I have to connect a repository?

No. Paste a dependency file and we read it inside the request, storing nothing. It is the most private way in and it is not the worst one.

What do I lose if I cancel?

Nothing you had. You drop to Free with one category, keep your stack profile, and everything derived from a disconnected source is deleted with a receipt.
